- Place Saffron in 125 ml warm Water to soak.



- Add Onion to the shimmering Oil and fry till Onion starts to turn translucent. Add the Garlic and fry from another 2 minutes. Add the drained Rice and cook for 3 minutes before adding the Saffron and 125 ml Water to the casserole.



- Once the 125 ml Water is soaked up by the Rice, add 750 ml hot Water, Paprika, Pepper, Chilli and Salt. Stir in Tomatoes and Spinach till Spinach is wilted then reduce the heat and cook covered on low for 20 minutes but don't over cook your Rice.



- Stir in the Seafood mix and a little more Water if needed. Cover and cook for another 10 minutes. Check seasoning and add Salt and Black Pepper if desired.


- Turn off the heat and sprinkle Parsley.
Serve Paella hot with Lemon slices.
